Strawberry Cream Cheese Cupcakes!




         I was craving something sweet and delicate and I had some free time on my hands so.. why not bake some cupcakes? I have never baked cupcakes with fillings and I have never piped icing onto a cupcake so this was definitely a challenge for me! I've always LOVED cream cheese and this cream cheese icing was just perfect. This recipe was made by Anna Saccone (love her!) but I've made some little changes to it to suit my taste more.

Ingredients for the cupcakes:
- 2 2/3 cups all-purpose flour
- 3 eggs
- 1 cup butter
- 30 small cubes of cream cheese (around 1 cup in total)
- 3/4 cup of strawberry jam
- 1 1/4 cups of fine sugar
- 2/3 cup of milk
- 1 teaspoon of vanilla

          First, I whipped the butter and sugar together until the sugar dissolved completely or until the mixture turns slightly white. Then, I stirred in the milk and vanilla. Next, I alternated between the eggs and flour, one at a time while slowly folding it in. The batter was divided into 30 individual cupcakes foils and the cream cheese and jam was stuffed in the middle of the batter. The oven has been preheated at 180 degrees celcius and I simply baked it for 25 minutes.

Ingredients for the icing on top:
- 2 cups of icing sugar
- 1 cup of cream cheese
- 1 teaspoon of vanilla
- 3 teaspoons of milk
- 1/4 cups of butter

          While the cupcakes bake in the oven, time to make some icing! Basically I just whipped it all up and it tasted DELICIOUS and I was happy with its consistency. I scooped it into a piping bag and piped it onto the cupcakes once they have cooled down.

          These cupcakes are perfect for a tea time treat but to me it's my guilty pleasure! I find them so cute and the strawberry jam and cream cheese filling is so so good. I hope you find this inspiring (although I don't find myself inspiring at all) and if you do, give it a go in the kitchen! You wouldn't believe how tasty these are. Happy baking!
